Ambrosia Fruit Salad






I was at a family dinner my daughter was putting on and she had a dessert called Ambrosia Fruit Salad. I liked it so much, I tried it myself. My recipe doesn't have all the same ingredients as hers, but its basically the same.

One bag of rainbow marshmallows
1 cup of cool whip
1 small container of sour cream (250 ml)
1 cup mandarin oranges, drained
one can of pineapple tidbits with juice
1 cup peaches, drained
maraschino cherries

Making it is very simple. Combine all the ingredients. Chill until ready to dish up.

Strawberry Rhubarb Pie





I can not make pie crust. I have tried and tried and it is always a disaster.So, what I do now is I either let my wife Nancy make the crust or I buy frozen prepared pie crusts. I used the frozen one today. There are two shells in each package. I took one shell, pricked it all over with a fork to keep it from cracking and baked it at 350 degrees for about ten minutes.

I cooled it and added one can of strawberry rhubarb pie filling. I suppose I could have painstakingly prepared the rhubarb and used fresh strawberries, but I was in a hurry so I used a pie filling that was already prepared.

I took the second shell and sliced it into strips. I placed those strips on top of the filling in a latticework design. Returned it to the oven until the top layer was golden brown. And voila. One strawberry-rhubarb pie. 

No Bake Cherry-Cranberry Cheesecake

This no bake cherry-cranberry cheesecake could not have been easier to make. For the crust I used 1/4 cup melted non-salted butter and 1 cup of graham wafer crumbs. Mixed together and spread in a deep-dish 9-inch pie plate.

The filling was 2 8-ounce pkg of softened cream cheese, 1 cup of cool whip, 2 tbsp of sour cream and 2 tbsp of cherry-cranberry pie filling. I blended all that together and spooned it on top of the crust, using a pastry spatula to smooth it out.

Then, I topped it with the remainder of the cherry-cranberry pie filling.

I usually chill it for 3 hours before serving. A spoonful of whipped topping is nice as a garnish.

No Bake Chocolate Cherry Cheesecake






Ingredients

Crust

1/4 cup melted butter
1 cup chocolate baking crumbs
1/4 cup crushed almond

Filling

3 8-ounce pkg philadelphia cream cheese, softened
1 cup cool whip
1/4 cup sour cream

canned cherry pie filling
1 tbsp cocoa

Topping

canned cherry pie filling


Instructions:

Mix together baking crumbs, crushed almond and melted butter to make a paste. Spread this in the bottom of a 9-inch pie plate. If it's too moist, add more crumbs. I use a baking spatula to spread it evenly. Set this aside.

Whip together softened cream cheese, cool whip and sour cream. Divide into two portions. To one portion, add 2 tbsp of canned cherry pie filling. To second portion, add cocoa. You could use melted chocolate chips in place of the cocoa. That's up to you.

Spread cherry cheesecake mixture over chocolate crust.

Spread chocolate cheesecake mixture over cherry layer.

Top with remainder of canned cherry pie filling.

Chill until completely set. Total prep time. 20 minutes.
