Cranberry Relish
I'm always thinking. Earlier this month, when I was trying new types of homemade cranberry sauce, I came across across a cranberry relish made by combining and cooking a bag of cranberries, a small can of mandarin oranges, drained, and a small can of pineapple tidbits, plus 1/4 cup of sugar. Once it's cooked and cooled, I mash the mixture and then add 1/4 cup of chopped walnuts or almonds. I went with almonds.
Later today, I'm making a baked ham dinner so I'll make the relish and use it as a side dish. It's not really a dessert, though.

A quick dessert
I was a bit uncertain what to make for dessert tonight, so I poked around in the pantry and the fridge. I found a white cake mix, so I'm making that. I also located a bag of frozen berries (blackberries, raspberries, strawberries) and a container of cool whip. That didn't take too much thinking. I'll just thaw out some berries, add some to the top of a slice of cake and top with whipped cream. I'll try to remember to get a photo. :)
